Description: This is a very rare sake, lovingly aged for 15 years to achieve
maximum complexity and richness of taste. The long maturation process
has created a uniquely delicious range of notes. The distinct amber color,
clear and bright, signals immediately that this is not a typical sake. Aroma
after aroma unfold to create a savory nose of shiitake mushroom, pecan,
chocolate-covered toffee, soy sauce, Beef Bourguignon, and more. The
palate is intensely flavorful and features dark chocolate mousse, toasted
pecan, dried currant, dried honey, shiitake, and a hint of balsamic, a fine,
silky texture and a very long finish complete a sensuous and sophisticated
drinking experience.
Recommended Temperature: Serve chilled to 50° F in a white wine glass.
At room temperature, the mushroom and soy aroma are less intense,
while aromas of fruit, pumpkin spice, heavily toasted almond, and coffee
deepen along with a distinct, salty finish. Warmed to about 105° F, this
sake becomes more mellower, featuring flavors of baked black cherries,
spice, sesame seed, and dark chocolate.
Food Pairing Suggestions: This sake is wonderful, before or after a meal, or
on its own, It will complement a plate of nuts, dried fruit and dry cheeses,
such as Manchego and aged gouda. It’s well match with seared foie gras
and excellent with tataki-style tuna or Wagyu beef.
